Among the most popular products sold on the overflowing stalls of these shops are the fragrant fruit soaps that color the markets with all the colors of the rainbow, known as Edirne's traditional handicrafts. The production of these soaps, known to have originated from Edirne, dates back to the 1600s.

These fruity soaps made by mixing musk, amber, and rose essence to achieve the real fruit size and color, were a valuable gift presented to the Ottoman palace, sultans, and local and foreign dignitaries. They quickly became an important profession in Edirne and were referred to as "palace soap" due to the priority given to orders from the palace, and as "sultan soap" due to the hygiene and gift-giving diligence of the sultans. With increasing demand, fruit soaps became one of the most popular professions in Edirne in the early 19th century. By the end of the 19th century and the beginning of the 20th century, there were more than forty shops selling fruit soap in the Bedesten and Arasta bazaars, and the production of fruit soap, known as "Sabuni", became one of the most important sources of income, and a symbol of the city's cultural heritage.
