Product Description and Distinguishing Features:
Antep Oğuzeli Pomegranate / Gaziantep Oğuzeli Pomegranate, which is registered as a geographical indication with the number 448, is used in the production of Oğuzeli Sour Pomegranate Syrup. It is produced without adding any sweeteners or additives and without using any device.
The physical and chemical properties of Oğuzeli Pomegranate Sour, which has a long history and a reputation link with the region, are given below.
Production Method:
The production stages of Oğuzeli Pomegranate Sour are as follows.
- The bowls on the tops of the harvested pomegranates are cut with a knife in a conical shape and scored from the sides to the bottom. It is separated by hand outwards like a flower, without crumbling or crushing.
- The peel part of the pomegranates, which are separated outwards, is lightly tapped with a wooden mallet specifically used for this job. The pomegranate seeds separated from the peel are placed in a large bowl.
- Pomegranate seeds are placed in fine perforated 50 kg sacks, as approximately 15-20 kgs, without waiting and without adding any sweeteners.
- Pomegranate sacks placed in specially prepared crushing pools or crushing vats are crushed with feet in a hygienic environment by wearing clean boots. If the seeds are mixed with the pomegranate juice, they will leave a residue of pulp and a bitter taste, thus it is prevented the pomegranate seeds from mixing with the pomegranate juice during the crushing process.
- The filtered pomegranate juice is put into a large and hollow copper cauldron. It is boiled for 3–5 hours over high heat wood fire.
- The pomegranate syrup, which is condensed by boiling, is transferred to another cauldron to be cooled.
- A clean cloth is covered over the cooling cauldron and left to cool in the open area.
- After about 6 hours, Oğuzeli Sour Pomegranate Syrup, which is filled into standard bottles suitable for contact with food, is stored in a dry and shady spot with its lid covered.
Production, Processing and Other Operations to be Performed within the Geographical Boundary:
The production of Oğuzeli Pomegranate Sour, which has a long history, requires mastery skills. Thus, all production stages of Oğuzeli Pomegranate Sour, which has a reputation link with the region, must be carried out within the specified geographical limit.
Inspection:
Inspections are carried out by the supervisory authority formed under the coordination of the Oğuzeli Municipality and with the participation of an expert member each from the Oğuzeli Municipality, Oğuzeli Agricultural Credit Cooperative, and Oğuzeli District Directorate of Agriculture and Forestry.
Inspections are carried out annually and are reported to the Turkish Patent and Trademark Office in accordance with the Industrial Property Law No. 6769. A separate audit can be carried out upon complaint or when it deems necessary.
The criteria for the audit are given below.
- Whether the pomegranate used in production is Antep Oğuzeli Pomegranate / Gaziantep Oğuzeli Pomegranate, registered with the number 448.
- Properness of water-soluble dry matter, titration acidity, pH, hydroxymethyl furfural (HMF) and sucrose value.
- Whether sweeteners or additives are used in production.
- Compliance with the production method.
- Compliance with packaging and storage conditions.
- The appropriateness of the use of Oğuzeli Sour Pomegranate Syrup phrase, logo and the origin name emblem of the geographical indication.
The supervisory authority may benefit from or purchase services of public or private institutions, or natural or private entities in charge, during the execution of the inspection. The registrant carries out the legal processes for the protection of rights.
