Product Description and Distinguishing Features:

Gaziantep Stuffed Zucchini with Green Beans; is a local dish produced by cooking green beans with meat and stuffed zucchini in the same pot. In the preparation of stuffed zucchini, vegetable marrow and fatty ground mutton; in the preparation of the dish, lean diced mutton is used.

Preparation of the stuffing:

12 small vegetable marrow

200 g fatty ground mutton

175 g rice

1 tomato

1 onion

2 cloves of garlic

0,5 tablespoon of tomato paste

0,5 tablespoon of paprika paste

0,5 teaspoon of black pepper

 

Preparation of Gaziantep Stuffed Zucchini with Green Beans:

500 g lean diced mutton

1000 g green beans

350 g tomato

2 green peppers

1 onion

1 tablespoon of tomato paste

0,5 tablespoon of paprika paste

1,5 tablespoon of ghee or butter

1 coffee spoon of granulated sugar

1 teaspoon of black pepper

 

Stuffing is prepared by mixing finely chopped onions, garlic, tomato paste, paprika paste, ground meat, black pepper and the desired amount of salt with washed rice. After the zucchinis are hollowed out, they are filled a little more than half with the smortar. The brims of the zucchini are covered with cut tomato pieces.

Diced mutton meat and a cup of water are added in a not very deep pot and roasted until the water is gone. Onto the roasted meat, ghee or butter, finely chopped green pepper, chopped onion and green beans that have been peeled and chopped are added. The ingredients are roasted by shaking and mixing the pot at intervals of 8-10 minutes. It is added tomato paste, paprika paste, granulated sugar, black pepper and the desired amount of salt, along with hot water just enough to cover the ingredients and cooked for about 15 minutes until the beans soften. By making a gap in the middle of the beans that are close to being cooked, the stuffed zucchinis prepared before are placed vertically in the pot. Hot water is poured up to the level of the beans and stuffed zucchinis. Tomatoes are chopped and added to the dish and cooked on low heat for about 45-50 minutes. When the stuffed zucchinis are cooked, the pot is removed from the stove and the stuffed zucchinis and green beans are served on the same plate.
