Product Description and Distinguishing Features:
Gaziantep Haveydi Bulgur Balls / Antep Haveydi Bulgur Balls are prepared by mixing and kneading simit (fine bulgur), oil, onion, parsley and pepper paste.

Production Method:
Ingredients (for 4-6 servings):
2 glasses of simit (fine bulgur)
1-2 medium onion
4-5 scallions
1 bunch of parsley
3-4 cloves of garlic or 2-3 fresh garlic
1 tablespoon of tomato paste
1 tablespoon of paprika paste
Salt, red pepper, black pepper
2-3 tablespoons of ghee or 100 ml olive oil
Optionally 2 finely chopped tomatoes
Optionally tarragon or 1 handful of walnuts or pistachios
Fine bulgur is soaked with approximately 2 glasses of water. Tomato and paprika paste, salt, red and black pepper are added and mixed, then it is let sit for 10-15 minutes.
The onions are sauteed with oil in a pan until they turn pink and added to the mixture. When it is mixed well and has a homogeneous consistency, it is kneaded until it reaches the consistency of gum. Optionally, tomatoes, finely chopped parsley, scallions, garlic, walnuts, tarragon or peanuts are added. After adding all the ingredients, it is mixed thoroughly for 4-5 minutes. With that mixture, bulgur balls are made and served. It is recommended to serve with pickles, ayran and greens on the side.
Production, Processing and Other Operations to be Performed within the Geographical Boundary:
Gaziantep Haveydi Bulgur Balls / Antep Haveydi Bulgur Balls have a production method specific to geographical border and its production requires mastery skills. Thus, all production stages of the product, which has a reputation link with the geographical border, should be carried out within the determined geographical limit.
Inspection:.
Inspections are carried out under the coordination of Gaziantep Development Foundation and by the supervisory authority consisting of at least four experts, one each from Gaziantep Provincial Directorate of Agriculture and Forestry, Gaziantep Metropolitan Municipality, Gaziantep Union of Chambers of Merchants and Craftsmen and Gaziantep University Gastronomy Department. Inspections are carried out regularly once a year, and when it deems necessary or upon complaint.
By the supervisory authority; properness of the material used in production, properness of the production method and serving, and the appropriateness of the Gaziantep Haveydi Bulgur Balls / Antep Haveydi Bulgur Balls phrase and the use of the geographical indication emblem are inspected.
The supervisory authority may benefit from or purchase services of public or private institutions, or natural or private entities in charge, during the execution of the inspection. The registrant carries out the legal processes for the protection of rights.
