Product Description and Distinguishing Features:

Gaziantep Alenazik / Antep Alenazik is a local dish prepared with eggplant, condensed yoghurt, garlic and mutton (diced or minced).

Gaziantep Alenazik / Antep Alenazik, which is especially in demand during summer, is one of the most well-known dishes of Gaziantep cuisine. The geographical border-specific production method and the presentation require mastery skills. For these reasons, it has a reputation link with the geographical border.

 

Production Method:

Ingredients for 1 Serving of Gaziantep Alenazik / Antep Alenazik:

100-150 g roasted eggplant
100-130 g condensed yoghurt
1-2 g garlic (optional)
135-200 g ground mutton / diced mutton
20-25 g ghee / butter
3-5 g powdered red pepper

For the production of Gaziantep Alenazik / Antep Alenazik, seedless eggplant is preferred. Eggplants are roasted by rotating them for 10-15 minutes depending on the temperature of the oven, and they are peeled and finely chopped.

Pre-salted ground meat or diced meat is strung on angular or flat kebab skewers that can fit into the barbecue. It is cooked by rotating in the same direction in the barbecue.

If desired, garlic is added to the condensed yoghurt and mixed. Roasted eggplants are placed in a tinned copper dish, condensed yoghurt mixture is added on it and heated slightly on low heat. Grilled ground meat or diced kebab is added on top, and served with ghee / butter with powdered red pepper is poured on it.

 

Production, Processing and Other Operations to be Performed within the Geographical Boundary:

The history of Gaziantep Alenazik / Antep Alenazik date back to old times. The geographical border-specific production method requires mastery skills. Inspection:

Inspections are carried out under the coordination of Gaziantep Metropolitan Municipality and by a three-person supervisory authority consisting of one expert representative from Gaziantep Provincial Directorate of Agriculture and Forestry, Gaziantep Metropolitan Municipality and Gaziantep Union Of Chamber Of Merchants And Craftsmen. Inspections are carried out annually, whenever it deems necessary and upon complaint.

The properness of the material used in production, the properness of the production method and the presentation, the suitability of the use of the phrase of Gaziantep Alenazik / Antep Alenazik, and the use of the geographical indication emblem are inspected by the supervisory authority.

The supervisory authority may benefit from or purchase services of public or private institutions, or natural or private entities in charge, during the execution of the inspection. The registrant carries out the legal processes for the protection of rights.
