Product Description and Distinguishing Features:
Gaziantep Yoghurt Potato / Antep Yoghurt Potato is a local dish prepared with condensed yoghurt, potatoes, chickpeas and diced meat.

Production Method:
Ingredients
450-500 g diced lean ground mutton
50-150 g chickpeas (pre-soaked)
1000-1500 g potato
600-720 g condensed yoghurt
1 pcs egg
20-40 g butter or ghee
5-6 g salt
3-5 g safflower
3-6 g black pepper
Recipe
Diced meat is placed in a pot and boiled with 4-5 glasses of water, chickpeas and salt are added and cooked with the lid closed until soft. Potatoes are peeled and cut into large cubes and mixed with meat and chickpeas. This mixture is boiled until the potatoes are cooked.
Condensed yoghurt is added in another pot, 1 egg is cracked into it and mixed well. It is constantly stirred in the same direction on very low heat. In this mixture, the cooking water is added islowly, and it is added to the dish when heated.
Butter or ghee is heated in a pan, safflower and black pepper are added to it. This mixture is drizzled over the food and served.

Inspection:
Inspections are carried out regularly once a year, when it deems necessary and upon complaint, by a supervisory authority under the coordination of Gaziantep Metropolitan Municipality, consisting of 3 people in total, one expert each from Gaziantep Metropolitan Municipality, Gaziantep Provincial Directorate of Agriculture and Forestry and Gaziantep Union of Chambers of Merchants and Craftsmen.
