Product Description and Distinguishing Features:

Antep Menengiç Coffee / Gaziantep Menengiç Coffee / Antep Melengiç Coffee / Gaziantep Melengiç Coffee is a coffee substitute in paste form, obtained by roasting and grinding the wild menengiç (melengiç) (Pistacia terebinthus L.) grown in the mountains of Gaziantep. Oil content is high. It is cooked by mixing with milk. It does not contain caffeine.

Since the 1600s, menengiç (melengiç) fruits have been roasted, pounded or grinded and consumed by producing a beverage called "menengiç (melengiç) coffee" in Gaziantep. According to a rumor, Murad IV rested here during the Baghdad Campaign and was served menengiç (melengiç) coffee.

The fatty acid value of menengiç (melengiç) fruit grown in Gaziantep is between 44-56% and oleic acid value is between 53-68%. Some of the physicochemical properties of the fruit grown in this geographical border are as follows.

 

Production Method:

When the color of the wild-grown menengiç/melengiç fruit is green-blue in October-November, it means it is ripe enough and is harvested.

Menengiç / melengiç fruits are picked and dried in the sun after washing. Dried fruits are roasted until they turn brown. After roasting, it is pounded until it reaches a paste consistency or it is grinded in a stone mill machine. The viscosity of the grinded product is minimum 1 (cP), the particle size is above 20-25 µm, maximum 45% of the total amount. The paste-like product is put in glass jars. Since it is very rich in oil, an oil layer can be seen on the surface of the product. The product is homogenized by mixing before use. It is mixed with milk and cooked on low heat until it boils. It is traditionally served in a copper cup with a lid.

 

Inspection:

Inspections are carried out by the 3 person supervisory authority formed under the coordination of Gaziantep Metropolitan Municipality Culture and Tourism Department and with the participation of an expert each from Gaziantep Metropolitan Municipality Police Department, Gaziantep Provincial Directorate of Agriculture and Forestry and Gaziantep Union of Chambers of Merchants and Craftsmen. Inspections are carried out regularly once a year, and when it deems necessary or upon complaint. Audit reports are regularly sent to the Turkish Patent and Trademark Office by Gaziantep Metropolitan Municipality.

The criteria for the audit are given below.

  • Using menengiç/melengiç fruit grown within the Gaziantep province.
  • Production in accordance with the production method.
  • Paste-like consistency of the product.
  • Properness of fatty acid, oleic acid, viscosity and particle size values ​​of menengiç (melengiç) fruit when necessary.
  • Appropriateness of the use of the phrase Antep Menengiç Coffee / Gaziantep Menengiç Coffee / Antep Melengiç Coffee / Gaziantep Melengiç Coffee and the geographical indication emblem.

The supervisory authority may benefit from or purchase services of public or private institutions, or natural or private entities in charge, during the execution of the inspection. The registrant carries out the legal processes for the protection of rights.
