Product Description and Distinguishing Features:

Antep Dried Bell Pepper/Gaziantep Dried Bell Pepper, one of the important elements of the rich Antep cuisine; is used in the production of stuffed peppers and is obtained by drying the bell peppers with the Latin species name of Capsicum annuum L. Antep Dried Bell Pepper/Gaziantep Dried Bell Pepper is hard, brittle and red in color.

Antep Dried Bell Pepper/Gaziantep Dried Bell Pepper; known as a winter product obtained by drying the red bell peppers grown in Gaziantep by using natural methods under the sunlight, by stringing them together with a needle on a cotton thread after separating the stems and seeds.

Gaziantep climate shows a transition feature between Mediterranean and Eastern Anatolian climates. Summers are hot and dry. Winters are not very cold. The temperature varies between -17°C and 48.8°C. The red peppers from which Antep Dried Bell Peppers/Gaziantep Dried Bell Peppers are obtained, gain their unique characteristics by being harvested and dried in July, August and September.

Constant and strong winds prevail over the Tibetan Plateau from December to April, and calm winds from June to October in Gaziantep. These winds help to balance the humidity rate and to provide a homogeneous drying in the dehumidification of the product. The drying process is generally carried out in August and September at an average temperature of 30-35 °C in 25 days/month and 19-28 km/h winds. The drying process is continued until the humidity rate decreases to 5%.

 

Production Method:

The to be dried bell peppers grown in Gaziantep are harvested during the months of July, August and the 2.5 month period until the middle of September. After the harvested bell peppers are thoroughly washed, they are seperated from the stems and seeds. With the help of a 10-15 cm long needle, it is strung on a cotton thread suitable for contact with food, with the open parts facing down. It is arranged to be 50 pieces per row.

It is hung on the exhibitions made of tree material, which are made in the shape of a triangle in order to make the best use of sunlight, without touching each other. The ropes are frequently checked for any breakage or stretching. The drying process takes 4-5 days depending on the climate. After the drying process is completed, the two ends of the rope are combined and the strings are connected to each other after they are removed from the joints.

Antep Dried Bell Pepper / Gaziantep Dried Bell Pepper is hung on strings and stored in dry and cool places. It can be stored for 1 year in conditions where the maximum relative humidity is 50-55% and the temperature is 15-18 °C.

 

Inspection:

Inspections are carried out by the coordination of Gaziantep Commodity Exchange, and a supervisory authority to be formed of 5 expert members each from Gaziantep Commodity Exchange, Gaziantep Gastronomy and Tourism Association, Gaziantep University Fine Arts Faculty Gastronomy and Culinary Arts Department, Oğuzeli Municipality and Oğuzeli Chamber of Agriculture.

The matters to be considered in the audit are as follows.

  • Whether the red bell peppers, which are the raw material of Antep Dried Bell Pepper / Gaziantep Red Bell Pepper, is grown in Gaziantep and whether the drying process is done in Gaziantep.
  • Properness of production method (properness of drying method and time)
  • The properness of the hard, brittle structure of the product (easily breakable, brittle), the unique dull red color
  • Properness of the phrase Antep Dried Bell Pepper / Gaziantep Dried Bell Pepper and the use of the emblem

Inspections are carried out at least once a year, and perpetually in case of complaints.

Audit reports are sent by Gaziantep Commodity Exchange to the Turkish Patent and Trademark Office within the time limits stipulated in the Industrial Property Law No. 6769.

The supervisory authority may benefit from or purchase services of public or private institutions, or natural or private entities in charge, during the execution of the inspection. The registrant carries out the legal processes for the protection of rights.
