Product Description and Distinguishing Features:
Gaziantep Doğrama / Antep Doğrama is a local summer dish prepared with diced meat, boiled chickpeas and eggplant.
The distinctive feature of Gaziantep Doğrama / Antep Doğrama is the local production method. Gaziantep Doğrama / Antep Doğrama has a long history within the region and has been featured in many cookbooks, promotional films and articles on Gaziantep cuisine. Production Method:
Ingredients:
500-600 g medium fat diced mutton
60-120 g chickpeas (pre-soaked)
100-200 g onion
40-60 g tomato paste
25-40 g paprika paste
1000-1500 kg eggplant
300-500 g tomato
100-150 g green pepper
100-150 g red pepper
10-15 ml/50-100 ml sumac extract or lemon juice
10-15 g garlic
15-20 g salt
3-5 g black pepper
2-5 g dried mint
20-40 g ghee or butter
Recipe:
Diced meat is thoroughly washed. It is cooked in a saucepan with 2-5 glasses of water. While the meat is being boiled, the foams formed on the surface of the water are removed. The pre-soaked chickpeas are added to the meat. Meat and chickpeas are cooked until tender. Meanwhile, the onions and peppers are finely chopped. Tomatoes and eggplants are cut into cubes. The garlics are peeled and crushed in a mortar. After the meat and chickpeas are cooked, onion, tomato paste, paprika paste, eggplant, tomato and pepper are added. It is boiled by adding sumac syrup or lemon juice. After the eggplants are softened, crushed garlic is added and boiled for 10 more minutes.
It is served by adding dried mint to the ghee or butter heated in a pan and drizzled on the dish.

Inspection:
Inspections are carried out regularly once a year, when it deems necessary and upon complaint, by a supervisory authority consisting of 3 people in total, under the coordination of Gaziantep Metropolitan Municipality and with the participation of one expert each from Gaziantep Metropolitan Municipality, Gaziantep Provincial Directorate of Agriculture and Forestry and Gaziantep Union of Chambers of Merchants and Craftsmen.
The audit criteria are as follows.
- Properness of materials used in production.
- Compliance with the production method.
- Properness of the appearance of the product.
- Appropriateness of using the phrase Gaziantep Doğrama / Antep Doğrama and the logo of the geographical indication.
The supervisory authority may benefit from or purchase services of public or private institutions, or natural or private entities in charge, during the execution of the inspection. The registrant carries out the legal processes for the protection of rights.
