For full fat cow cheese, the milk of Ezine region is collected and fermented at 34 °C after being heated at 65 °C;
After waiting for 1 hour and 45 minutes, the milk is left to break. After the milk is broken, it is allowed to rest for 15 minutes and then immediately pressed.
After waiting in brine for 1 day, it is collected in tins and rested for 2 days. Then it is taken to cold storage and offered for sale after maturing for minimum 8 months.
