The Siyez wheat, known as "Kaplıca wheat," is grown in Kastamonu and dates back approximately 12,000 years. As the world's first wheat, Siyez wheat is genetically unmodified. Due to its fibrous structure and nutritional properties, Siyez Flour is recommended as a substitute for white flour, containing very little gluten compared to it. It is produced in traditional ways at a stone mill under state supervision on specific days of the week, using organic Siyez wheat from Kastamonu. Siyez wheat is an ancestral seed, maintaining its genetics and natural qualities. Due to its unaltered genetic structure, ancient type, and rich nutritional value, it has been selected as PRESIDIA by the Slow Food Biodiversity Foundation.
