Product Description and Distinguishing Features:

Urmu mulberry grown in Gaziantep is used in the preparation of Antep Urmu Mulberry Syrup / Gaziantep Urmu Mulberry Syrup. Urmu mulberry is generally grown in cities with continental climate characteristics and is mostly known as sour black mulberry among locals. Gaziantep province is also one of the provinces where this kind of mulberry is grown. Urmu berry grown in Gaziantep province is a mulberry fruit with a sour taste, more like blackberry, with the Latin species name Morus nigra L. It has its own unique taste and smell. Ripe fruits are shiny, purple-black in color (Figure-1).

Urmu mulberry grows on trees that shed their leaves in winter and bear grape-like fruits. The height of the well-developed trees can reach up to 8-10 meters. Urmu mulberry tree is a plant that is sensitive to heat and light. In the case of Urmu mulberry cultivation, it should be grown by paying attention to the protection of the sapling from the cold in the first year. One-year-old seedlings can resist winter temperatures as low as -20˚C. In extremely shaded environments, the yield of the tree decreases. The soil requirement of the Urmu mulberry tree is rich in hummus and normally permeable soils. If the Urmu mulberry tree is resistant to dry soil conditions and the average humidity conditions are well adjusted, the yield increases. Fertilization in trees occurs by pollination and through bees. It completes its maturation as a fruit in May and June. Urmu mulberry seedlings begin to bear fruit when they reach an average of three years of age.

Antep Urmu Mulberry Syrup / Gaziantep Urmu Mulberry Syrup is a non-alcoholic beverage which is well known in the region and is widely consumed especially in summer.

The low pH value of the Urmu mulberry fruit and the production method used ensure that the shelf life of the concentrated syrup produced from this fruit is long. The use of urmu berry grown in Gaziantep in the preparation of the syrup, and the production method applied, the unique purple-black color of the product, its taste and smell are the most characteristic features of the product. In addition, the fruit rate in the final product produced as a concentrate is at least 65%.

The prepared syrup is diluted with water 3-4 times of the amount to be used and turned into a beverage and served to the consumer. It is recommended to consume the product cold in order to provide the desired taste feature.

 

Production Method:

The fruits ripening in May and June are processed after being harvested. The first part of the process in Antep Urmu Mulberry Syrup production is sorting and washing. In about 100 kg of washed and sorted fruit; 20 liters of water on average, 3 kg of white sugar, 0.5 kg of citric acid are added. These components are taken to the mixer and mixed for an average of 3 minutes. The resulting mixture is filtered and separated from its pulp, thus obtaining a clearer concentrated product. 75-80 liters of mulberry syrup is produced by using 100 kg of fruit and other ingredients. Mastery skills have an important place in the production stages of mulberry syrup.

In order to increase the shelf life of the product, it is pasteurized for 5 minutes at 75oC and filled. Recommended consumption date of the product in refrigerator conditions at 4-6oC is 6 months from the date of manufacture. After opening the package, it should be consumed within 3 days, provided that it is kept under refrigerator conditions. Before consumption, it is recommended to dilute it 3-4 times with more water and consumed cold.

Inspection:

Inspection is carried out by an inspection authority consisting of at least 3 people, under the coordination of Gaziantep Commodity Exchange, with the participation of one member each from Gaziantep Commodity Exchange, Gaziantep Provincial Directorate of Agriculture and Forestry, Gaziantep Gastronomy and Tourism Association, Gaziantep University Fine Arts Faculty Gastronomy and Culinary Arts Department.

The audit is carried out at least once a year and is reported to the Turkish Patent and Trademark Office by Gaziantep Commodity Exchange on a regular basis annually by being reported in accordance with the Industrial Property Law No. 6769. A separate audit can be carried out upon complaint or when deemed necessary.

The inspection authority controls the geographical indication emblem and its use, whether urmu berry is used in production and whether the production is in accordance with the issues specified in the "Production Method" section. The nonconformities detected during the audit and the necessary measures to be taken are notified to the audited person, institution or organization.

The supervisory authority may benefit from or purchase services of public or private institutions, or natural or private entities in charge, during the execution of the inspection. The registrant carries out the legal processes for the protection of rights.
